Peanut Noodle Pad Thai

Okay. I used to have a very bad relationship with spicy food. Spicy food was something I used to not only avoid, but it was something I couldn’t even begin to eat. I used to buy only mild salsa!

Enter my husband into my life: Austin is one of the best cooks I know. He can make even the simplest food taste quality and amazing! Austin loved spicy food and started adding a little more spice to every meal he made me and what do you know? I slowly began to develop more of a tolerance for spice!

Enter pregnancy: suddenly I could eat anything spicy! Habaneros, jalapeños, and spicy sauces! Not just tolerate, I even craved them..weird…Fast forward to 4 months postpartum I can still eat and love spicy food! Hopefully our little girl ends up liking it too. Haha.

Anyways how that all related to this dish. What started this whole train of thought is before I had never eaten peanut noodles since I thought they were too spicy. Then when I was pregnant my wonderful husband made it for me and I adored it. I still crave it once in a while and he still cooks it up just like the other night when I snapped these photos!

The good news is peanut noodles only require a few basic ingredients that you probably already have in your kitchen! These are simple to make last minute if you want some thing a little fancy or foreign. And now that I have the recipe written down, I can make these whenever I want! I hope you enjoy it as much as we do. Whip this up in your kitchen! I promise it isn’t too spicy and you will love it!

Mr. Prilly’s Perfect Peanut Pad Thai

Peanut Sauce:

  • 2-3 cups of creamy peanut butter
  • 2-3tbs of butter
  • 2tbs of soy sauce
  • 1tbs rice wine vinegar
  • some ginger seasoning (2 big spoonfuls)
  • some paprika seasoning (2 big spoonfuls)

Spaghetti cooked with a little salt in the pot

2 Chicken breasts seasoned generously with kinders caramelized onion butter and Cajun seasoning

Cook 2 jalapeños and an 1 onion in the chicken pan when the chicken finishes. Add paprika and ginger to taste.

Thinly cut some carrots and cabbage (or lettuce) to top the Pad Thai.
