My wonderful husband is an amazing cook. You can expect, if what I am posting is a meal, we made it together or he made it himself (and I loved it so much I had him write it down to share it with y’all). This is meal is the latter. My husband made this last week and it was such a new spin on anything I had ever tasted that I absolutely loved it! It is a Mexican style breakfast bowl. I asked him to make us an egg skillet for dinner and instead he made this amazing Mexican, breakfast, egg, and rice skillet. Don’t shame it till you try it, then I promise you you wont shame it. 😉
The good news is you likely have all that you need on hand for this recipe! So what are you waiting for? Whip this up for a unique breakfast or a unique dinner if you are like us and always want breakfast 24/7!

Mr. Prilly’s Breaks-Mex
♥ 1 1/2 cups of rice (prepare with 3 cups of water, 1tbs butter, and salt/pepper to taste)
♥ 6 eggs (beaten and mixed with 1 cup of milk)
♥ 4 Breakfast sausage patties cut into small bite size pieces and fried
♥ 1 tsp of each of the following: Salt, Pepper, Cumin, Tequila Lime Seasoning, Siracha, and Cilantro (we added probably 2-3 teaspoons of the Cumin, Tequila Lime, Siracha, and Cilantro, but only do this if you like a stronger taste!)
♥ 4 Small Peppers
♥ 1 Large Onion
♥ 1 1/2 Cups of Spinach (thinly sliced)
- Cooked rice with 1 tbs of butter and salt and pepper to ta
- Beat the eggs and milk until combined. Slowly cook, stirring constantly and leaving slightly wet and not dry, add spices half way through (trust the process).
- Cook diced peppers, and diced onions, and chopped spinach in a pan with 2 tbs of olive oil, adding aforementioned spices of your choice. (we also added another 1 tsp of each of the following: Salt, Pepper, Cumin, Tequila Lime Seasoning, Siracha, and Cilantro to this as well as the eggs) Once done, add the cooked, diced sausage patties
- Fill half a plate with the soft scrambled eggs, and half the plate with rice. Place the sausage, peppers, and onions in the middle of the two and top with sour cream, siracha, or whatever topping you desire!
