Hello All! My wonderful husband got me a rolling pin for Christmas! I was so very excited! You don’t think about needing a rolling pin until you need it. Living with my parents they had everything you could need for baking! Then when I moved out and got married, I realized all the little things you don’t think of getting until you need them in the middle of a recipe. Haha!

I have been squeaking by the past two and a half years by borrowing my neighbor’s rolling pin (shout out to a great neighbor!) and baking wedding cakes at my mom’s. My oven is stressful y’all, and wedding cakes are too stressful as it is, so I just go to her house to do wedding cakes! Plus she has triple the counter space. Anyways, back to rolling pins. The rolling pin came in a kit that also had silicone baking sheets and a mat to put over your counter to keep whatever dough you are rolling out from sticking on your counter! Whoowhoo! What a treat! I was so excited to test it out. I made four loaves of Honey Oat Bread after Christmas to try out the new mat and rolling pin. Folks, lemme tell ya! They tuned out fantastic. I have been trying to mix oat flour with my white flour to get an extra source of fiber while I am breastfeeding and this recipe fit the bill.

I got the recipe from here, at Texas Homesteader. I swapped the honey for 100% maple syrup and I also a little extra sugar. What can I say, it was healthier than most breads, so I figured it wouldn’t hurt to add a little sugar. All four loaves turned out lovely. My husband and I ate the first loaf last week and I froze the other three. With a baby I don’t bake as often as I used to, so I wanted to bake in bulk when I feel like it and freeze the rest for convenience. I defrosted a loaf today and it seemed to handle the freezer and defrost well! So if you are wanting to bake in bulk this recipe handled it well! I am looking forward to having a piece of toast with grandma’s homemade jam in the morning with my coffee!!
